Ingredients
For 6 people
- 1 large egg
- 200g cottage cheese
- 75g ground almonds
- 50g flour
- 1/2 teaspoon baking powder
- 20g icing sugar
- 1 sachet vanilla sugar
- 1 tablespoon green tea powder (matcha)
- 2 apples (here a Golden and a Granny, to be chosen according to your preferences)
- 1 shortcrust pastry made with butter
Instructions
- In a bowl, beat the egg with the cottage cheese, add the ground almonds, flour and baking powder, icing sugar and matcha tea. Mix until you get a smooth mixture.
- Peel the apples and cut them into thin slices. Cover them with vanilla sugar and cook them covered in the microwave for 3 minutes. Another alternative: you can also brown them in a pan with vanilla sugar and butter. Unroll the shortcrust pastry, spread the matcha tea mixture on top (without going to the edges). Arrange the apple slices on top.
- Fold the sides to form a loaf, and stick the edges by moistening the dough. Place the loaf in a cake mold, leaving the parchment paper.
- Bake in a preheated oven at 200°C, thermostat 6-7, for 35 minutes. If possible, turn the loaf over halfway through cooking so that the dough cooks well on both sides.
Finally, let cool. Serve with a scoop of ice cream or sorbet.
