Apple and Green Tea Cake” – delicious and easy-to-make treat!


For 6 people

  • 1 large egg
  • 200g cottage cheese
  • 75g ground almonds
  • 50g flour
  • 1/2 teaspoon baking powder
  • 20g icing sugar
  • 1 sachet vanilla sugar
  • 1 tablespoon green tea powder (matcha)
  • 2 apples (here a Golden and a Granny, to be chosen according to your preferences)
  • 1 shortcrust pastry made with butter


  1. In a bowl, beat the egg with the cottage cheese, add the ground almonds, flour and baking powder, icing sugar and matcha tea. Mix until you get a smooth mixture.
  2. Peel the apples and cut them into thin slices. Cover them with vanilla sugar and cook them covered in the microwave for 3 minutes. Another alternative: you can also brown them in a pan with vanilla sugar and butter. Unroll the shortcrust pastry, spread the matcha tea mixture on top (without going to the edges). Arrange the apple slices on top.
  3. Fold the sides to form a loaf, and stick the edges by moistening the dough. Place the loaf in a cake mold, leaving the parchment paper.
  4. Bake in a preheated oven at 200°C, thermostat 6-7, for 35 minutes. If possible, turn the loaf over halfway through cooking so that the dough cooks well on both sides.

Finally, let cool. Serve with a scoop of ice cream or sorbet.
