1. Goat cheese shot glasses: Mix 2 tablespoons of goat cheese, 1 tablespoon of heavy cream, salt, and pepper. Boil 1/4 of a green bell pepper and 1/4 of a red bell pepper in water for 10 minutes. Cut the cooked and peeled peppers into small cubes. Layer the shot glasses with a layer of green peppers, a layer of goat cheese using a pastry bag, and red peppers for decoration. Add a dash of paprika.
2. Ham mousse shot glasses: Mix 4 slices of ham spread with 2 tablespoons of softened butter. Place this mixture at the bottom of 4 small shot glasses. On top of 2 of them, pour 1 teaspoon of canned blonde lentils. On the other 2, place a small piece of tomato.
3. Avocado/tuna shot glasses: Blend 1 avocado with 2 tablespoons of lemon juice, tabasco, salt, and pepper. Pipe this mousse into 2 small shot glasses. Top with canned tuna (use good quality), a sprinkle of lemon zest, and a dot of mayonnaise.
4. Avocado/shrimp shot glasses: Blend the avocado with 4 tablespoons of grapefruit, salt, pepper, and tabasco. Place in the shot glasses and top with a tablespoon of peeled gray shrimp and a few pieces of grapefruit flesh.
Topping it off: Smoked ham and lentil shot glasses: Grill 2 slices of smoked ham. Cut it into thin strips and place it in the shot glasses with 1 spoonful of lentils.
