Ingredients
For 10 people
5 smoked sausages
5 regular sausages (preferably Creole sausages)
1 large onion
6 ripe tomatoes
6 or 7 small and hot chili peppers
1 garlic clove (optional)
1/2 teaspoon of turmeric (optional)
Oil, salt
Instructions
1. Boil the sausages in water (start with cold water). Change the water 1 to 2 times and be careful of potential splatters. Remember to prick the sausages.
2. While waiting, finely chop the onion and tomatoes. Crush the garlic (or use a blender). Crush or blend the chili peppers.
3. Once the sausages are ready (when they are firm and slightly degreased), cut them into medium-sized slices (about 5 slices per sausage).
4. Fry the sausages in sunflower oil (medium heat). Turn them over and when they turn brown on both sides, add the onion, garlic and turmeric. Let everything “cook down” for 2 minutes, then add the chili peppers. Stir.
5. Add the tomatoes and a pinch of salt, mix well.
Finish it off Cover and turn occasionally. Let the tomato reduce well. It’s ready!
