Ingredients:
300g of carrots
150g of smoked bacon (lardons)
2 tablespoons of oil
2 onions
2 cloves of garlic
200g of lentils
cumin, paprika
beef broth
500g of potatoes
250g of mild or spicy chorizo
Instructions:
1. Peel the carrots and cut them into large cubes or thick slices. Fry the bacon in 2 tablespoons of oil. Add the sliced onions and sauté while stirring. Squeeze the 2 cloves of garlic over the mixture.
2. Add the lentils, 1 teaspoon of cumin and 4 teaspoons of paprika.
3. Pour 1/4 liter of hot beef broth (made from cubes) into the mixture. Bring to a boil and simmer for 15 minutes on low heat.
4. Peel the potatoes, cut them into large cubes and add them to the lentils. Cook for 30 minutes.
To finish, slice the chorizo thinly. Reheat in the pot. Adjust seasoning with salt and pepper if necessary, but it is often not required.
