Ingredients
24 cherry tomatoes
8 tbsp pesto
3 tbsp crème fraîche
4 sun-dried tomatoes
pepper
fleur de sel
1 mozzarella ball (preferably di buffala)
2 tbsp lemon juice
6 fresh basil leaves
Preparation
Step 1
In a bowl, mix together the pesto, crème fraîche, lemon juice, and pepper (to taste).
Step 2
Put a small pinch of fleur de sel (or coarse salt) in the bottom of each verrine.
Step 3
Cut the cherry tomatoes in half and arrange them in the verrine, making 2 or 3 layers.
Step 4
Tear the mozzarella into chunks and place them haphazardly over the tomatoes for a generous layer. Add some freshly sliced basil leaves.
Step 5
Finish with the pesto cream to fill the verrine well and decorate with a piece of sun-dried tomato.
Step 6
Serve chilled.
