8 slices of coppa (or smoked bacon)
1 or 2 zucchinis (courgettes)
2 garlic cloves
1 bunch of parsley
1. Preheat the oven to 200°C (thermostat 6-7). Peel and crush the garlic, chop the onions.
2. Wash the tomatoes, zucchinis, and potatoes. Peel the potatoes, then slice them thinly along with the zucchinis and tomatoes.
3. Cook the coppa in a pan without any fat along with the garlic, onions, and parsley.
Finishing Touches: Brush an ovenproof dish with olive oil, then place a layer of zucchinis, followed by a layer of tomatoes, then a layer of potatoes. Pour the contents of the pan on top, then add another layer of zucchinis, tomatoes, and potatoes. Drizzle with a little olive oil. Bake for approximately one hour.
