1. Without peeling, generously rinse the cucumbers under the tap and then cut them into very thin slices.
2. To drain the cucumber, put the slices in a colander and sprinkle with coarse salt. Stir and leave for 20 minutes.
3. Once the time has elapsed, rinse the slices with cold water, then place them on a clean cloth to soak up for about ten minutes.
To finish: In a bowl, mix the cream, cottage cheese, and olive oil. Add salt, pepper, and tarragon. Add the cucumber slices, mix well, and refrigerate for 1 hour. Serve cold.
