Creamy Pumpkin Soup made in Cookeo

Ingredients

  • 1 onion
  • 1 tsp of oil
  • 1 tbsp of chopped parsley
  • salt
  • 1/4 of a pumpkin
  • 20 cl of cream
  • 1/2 tsp of ground nutmeg

Preparation

  • Step 1: Cut the pumpkin flesh into large cubes.
  • Step 2: Finely chop the onion and pour it into the bowl of your Cookeo pressure cooker.
  • Step 3: Brown the onion in the Cookeo bowl with the oil on the “brown” mode for 3 minutes + preheating, stirring constantly.
  • Step 4: Add the pumpkin cubes to the Cookeo bowl and add 75 cl of water. Start the cooking process on the “pressure cooker” mode for 15 minutes.
  • Step 5: Add the cream, salt, pepper, and nutmeg according to your taste. Mix using a blender or hand blender, being careful not to scratch the Cookeo bowl.
  • Step 6: Sprinkle with chopped parsley before serving.
