How to prepare Crispy Salmon on Mashed Potatoes
To prepare crispy salmon on mashed potatoes, start by preparing the bread. Cut the slices into small cubes (1), and then put them in a mixer (2) with the chopped parsley (3).
Add the zest of half a lemon (4), and add the mint (5), thyme (6), and marjoram (7) to the mixer. Then add salt and pepper (8), and the two tablespoons of extra-virgin olive oil (9).
Chop the mixture coarsely (10), but not too finely, and transfer it to a bowl. Now, dry the salmon fillets and cut 12 slices of the same size as the mashed potatoes on which they will be placed (11). Coat the salmon fillets in the breading (12), pressing it firmly onto all sides of the fillets.
Place the breaded salmon on a baking sheet lined with parchment paper (13). Bake at 190°C for ten minutes in a preheated oven in static mode (in a ventilated oven at 160°C for 10 minutes). Once the salmon is cooked and golden brown (14), remove it from the oven, let it cool slightly, and then place each fillet on a mashed potato (15), and top each one with some herb leaves. Serve your crispy salmon on mashed potatoes!
Storage
To enjoy the crispiness of the salmon at its best, this appetizer should be eaten immediately. If you need to prepare it in advance, we recommend storing the cooked salmon in a sealed container in the refrigerator for a maximum of one day. When it’s time to serve, heat it up for a few minutes and place it on the mashed potatoes.
Tips
I find crispy salmon to be a perfect recipe: refined, delicious, quick to prepare, and loved by everyone. A wonder, isn’t it? In addition, if you are missing any ingredients, don’t worry, you can easily substitute them with something else. For example, use grated bread instead of bread slices, and use any herbs you like (I suggest trying to add some rosemary leaves). And if you want to give your dish a more intense flavor, you can add a crushed clove of garlic to your breading: try it and see!
