Squid with peas is a deliciously rustic Italian dish that never goes out of style, just like stuffed squid, another timeless home-cooked recipe. It is widespread in many coastal regions, often included in menus as a Christmas second course. Therefore, it represents a typical dish that knows different small variations, some use a pinch of chili, some use fresh tomatoes and some use tomato concentrate. Some prefer the white version without tomato. The only essential rule: the squid must be tender… the secret is not only to cook the squid in a stew but also and above all to choose fresh and quality ingredients that will guarantee an excellent result.

How to prepare Squid with Peas

To prepare squid with peas, first make the vegetable broth. Once filtered, keep it warm. Then peel and chop the onion with a knife 1. Now take your already cleaned squid (if they were not cleaned, you can follow our instructions on how to clean squid). Cut off the tentacles 2, remove the eye and cut them into pieces 3.

Cut the mantle into rather large slices 4. Heat the olive oil in a large pan, add the chopped onion 5 and sauté over medium heat for about 10 minutes, adding hot vegetable broth 6 as needed to prevent the onion from drying out too much.

When the onion is soft and transparent, add the squid 7, salt and pepper. The squid may release some water, so you can turn up the heat to dry them. When they have lost their water, deglaze with white wine 8 and let it evaporate. Then add the peas 9, the previously crushed peeled tomatoes and remove the stalk 10; add a ladle of broth and continue cooking over low heat for 15-20 minutes. Meanwhile, also wash, dry and chop the parsley 11. When the squid with peas are soft, turn off the heat, add the fresh parsley and serve immediately 12.

Conservation

You can keep squid with peas in the refrigerator in an airtight container for a maximum of 1 day. They can be frozen if you have used fresh, not thawed ingredients.

Tips

Toast some slices of homemade bread and season them with oil and garlic, they will be a perfect accompaniment to squid with peas.
