Dry-aged filet mignon


Here are the ingredients required for making dried filet mignon:

  • Gros sel
  • Thyme
  • 1 filet mignon
  • Pepper (5 berries)


Step 1:

Inspired by Marielle’s (19th Marmiton Meeting) recipe for dried duck breast, this preparation is as simple:

  • Soak the filet mignon in flavored gros sel and thyme in an airtight container in the refrigerator for 36 hours.
  • Rinse and dry it thoroughly before seasoning with pepper and tightly rolling it in a cloth.

Step 2:

Forget about it for 3 weeks in the refrigerator’s vegetable drawer, and enjoy it by serving in thin slices chilled or at room temperature: it will be tender and delicious.
