- Soak the filet mignon in flavored gros sel and thyme in an airtight container in the refrigerator for 36 hours.
- Rinse and dry it thoroughly before seasoning with pepper and tightly rolling it in a cloth.
Forget about it for 3 weeks in the refrigerator’s vegetable drawer, and enjoy it by serving in thin slices chilled or at room temperature: it will be tender and delicious.
