Ingredients
1 (4 pound) butternut squash – peeled, seeded, and cubed
6 ounces crumbled blue cheese
¾ cup Italian bread crumbs
⅓ yellow onion, minced
¼ cup extra-virgin olive oil
1 tablespoon minced fresh thyme
Sea salt and ground black pepper to taste
Directions
1. Preheat the oven to 425 degrees F (220 degrees C).
2. Toss the squash, blue cheese, 1/2 cup bread crumbs, onion, olive oil, and thyme in a large mixing bowl.
3. Season with sea salt and pepper.
4. Pour the mixture into a large baking dish.
5. Sprinkle with the remaining 1/4 cup bread crumbs.
6. Bake in the preheated oven until the top is lightly browned, 35 to 40 minutes.
