Ingredients
150g flour
150g powdered sugar
2 eggs
100g melted butter
1 plain yogurt
1 sachet of baking powder
1 pinch of salt
100g grated coconut
Instructions
1 Preheat the oven to 350°F (180°C) or gas mark 6.
2 Beat sugar and eggs together using a whisk. Add flour, baking powder, salt, and yogurt. Slowly add in the melted butter. Mix well and finally, add the grated coconut. Mix again.
To finish, pour the mixture into molds, filling 2/3 of the way. Bake for 20 minutes. The muffins should be golden and well-puffed.
