100 g grated Comté cheese
1 bouillon cube
1 tbsp flour
30 g butter
1 tsp olive oil
6 slices of white bread
25 cl white wine
Peel and slice the onions into rounds using a knife and a cutting board.
In the Thermomix bowl, sauté the onions in butter and oil until they are tender and lightly browned for 10 mins / 100°C / spoon speed / reverse.
Sprinkle the onions with flour and crumble in the bouillon cube. Add 1 liter of hot water and white wine. Season and let simmer for 40 mins / 100°C / spoon speed / reverse.
Preheat the oven to 240°C (th. 8).
Toast the bread. Place each slice at the bottom of 4 large oven-safe ramekins. Sprinkle with some grated cheese, then distribute the soup. Sprinkle with cheese again and broil for a few minutes, monitoring constantly.
