Ingredients:
- 1/2 onion
- Oil
- Pepper
- Salt
- 5 eggs
- 2 or 3 medium-sized potatoes
- Herbes de Provence (optional)
Preparation:
Step 1: Beat the eggs in a bowl and add salt, pepper, and Herbes de Provence (if desired).
Step 2: Cut the onion into thin slices and cut the potatoes into small cubes. Set aside.
Step 3: Heat oil in a pan. When the oil is hot, cook the potatoes over low heat and brown them at the end of cooking (check with the tip of a fork) over medium heat.
Step 4: Add and brown the onions.
Step 5: Pour the beaten eggs into the pan.
Step 6: Flip the omelet as best you can onto the other side (either using a plate or cutting it into four pieces and flipping with a spatula) and cook it.
Step 7: This omelet can be eaten hot or cold.
