1 small cauliflower, cut into 3cm chunks
1 aubergine, cut into 3cm chunks
1 sweet potato (around 200g), cut into chips
1 red pepper, cut into 3cm chunks
1 yellow pepper, cut into 3cm chunks
1 red onion, sliced
2 tsp cumin seeds
2 tsp ground turmeric
3 tbsp rapeseed oil
Heat the oven to 200C/180C fan/gas 6. Put all the vegetables in a large roasting tin, and add the cumin seeds and turmeric. Drizzle over the oil and season generously with salt. Mix with your hands to combine.
Roast for 30-40 mins, stirring once halfway through until all the veg is cooked through.
