1 pie crust
100g grated Gruyere cheese
1 large container of crème fraiche or fromage blanc
2 heads of lettuce (or other greens)
Step 1: In a mixing bowl, combine the crème fraiche, 2 egg yolks, and 2 whole eggs. Add salt and pepper to taste.
Step 2: Wash and dry the lettuce leaves, then chop them finely. Finely chop the parsley and chives, and slice the shallots.
Step 3: Mix together the lettuce, parsley, chives, shallots, and grated Gruyere cheese, then add this mixture to the bowl with the crème fraiche and eggs.
Step 4: Preheat your oven to 180°C. Line a tart tin with the pie crust and prick the base several times with a fork to prevent it from puffing up as it bakes.
Step 5: Pour the filling into the crust and bake for about 30 minutes or until the tart is golden brown on top.
