Green Asparagus Tart” – delicious, easy-to-make savory tart.


For the crust:

  • 250g flour
  • 125g butter
  • 5-10cl milk
  • 1 pinch of salt

For the filling:

  • 400g fresh green asparagus
  • 80g grated parmesan
  • 1 plain yogurt
  • 3 eggs
  • 20cl fresh cream
  • 5cl Muscat de Rivesaltes
  • salt and pepper


  1. In a bowl, mix together the flour, pinch of salt, and butter cut into pieces. Add the milk and form a ball. Let the dough rest in the fridge for at least 30 minutes.
  2. Peel the asparagus, tie them into two bunches, and cook them in boiling salted water for 10 minutes. They should remain slightly firm. Drain them, refresh them under cold water, and pat them dry on a towel. Cut them into 3cm pieces.
  3. Preheat the oven to 180°C (th 6). Roll out the crust and put it into a tart pan. Prick the bottom with a fork.
  4. In a bowl, beat the eggs together. Add the yogurt, cream, Muscat, salt, and pepper.
  5. Sprinkle 50g of grated parmesan onto the crust, then add the asparagus. Pour the egg mixture over the top and sprinkle with the remaining 30g of parmesan.
  6. Bake for about 35 minutes in a medium oven. Serve hot or lukewarm.
