Lyon-style Sausage in Brioche


  • 1 onion
  • 2 bay leaves
  • 200g flour
  • 1 packet of yeast (preferably baking yeast)
  • 15g sugar
  • 80g soft butter
  • 3.5g salt
  • 1 sausage from Lyon (with pistachios or plain)
  • 2 eggs


Step 1

In a mixing bowl, combine the flour, yeast, salt, sugar, and 2 eggs.

Step 2

Knead the dough for a few minutes, then add the soft butter and knead again until you get a nice ball.

Step 3

Let the dough rest while you cook the sausage.

Step 4

Fill a large pot with water, add the onion cut in half, bay leaves, and sausage.

Step 5

Cook for about 25 minutes (cooking time varies depending on the size of the sausage).

Step 6

After cooking, remove the skin from the sausage. Roughly roll out the brioche dough and place the sausage on top. Using your hands, wrap the sausage in the dough and place everything in a loaf pan.

Step 7

Bake the sausage in brioche at 180°C (thermostat 6) for about 15 minutes.
