For the special vinaigrette:
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 2 tomatoes
- 1 onion
- flat-leaf parsley
- 1 medium-sized cucumber
Wash and peel the vegetables.
Cut the tomatoes into small pieces, keeping the juice and seeds.
Cut the cucumber into small cubes.
Finely chop the onion.
Prepare the vinaigrette:
Make a vinaigrette with olive oil, lemon juice, and salt.
Add cumin and paprika.
Put all the vegetables in a bowl, pour the desired amount of vinaigrette over them and mix well.
Refrigerate the salad so that the vegetables are well infused with the sauce and because this salad is best served cold.
Sprinkle finely chopped parsley over it before serving.
