Morteau sausage with potatoes” – Simple and descriptive.


For 4 servings

  • 1 Morteau sausage
  • 1 carrot
  • 1 minced leek
  • 10 peppercorns
  • 800g of peeled potatoes
  • a little butter
  • 2 shallots
  • parsley


  1. Boil the Morteau sausage for 30 minutes in boiling water with the carrot, minced leek, and 10 peppercorns.
  2. Meanwhile, cook the peeled potatoes, and in a frying pan, brown the 2 chopped shallots in butter. Add the potatoes and sliced Morteau sausage, a ladle of broth, and simmer for 10 minutes over low heat. Sprinkle with chopped parsley.
