Pineapple Shrimp” – A Delicious Twist on a Classic Dish!

Ingredients

  • 40 g ginger
  • 2 onions
  • 60 g grated coconut
  • 2 tbsp peanut oil
  • pinch of salt and pepper
  • 800 g cooked shrimp, peeled
  • 2 limes
  • 1 can pineapple slices
  • 10 fresh coriander leaves

Instructions

  1. In a bowl, mix the finely chopped onions, grated ginger, peanut oil, grated coconut, salt, and pepper.
  2. Add the freshly squeezed lime juice and finely chopped coriander.
  3. Pour the mixture over the shrimp and add the pineapple pieces.
  4. For extra flavor, refrigerate for several hours to marinate.
  5. When ready to serve, add some fresh coriander leaves for decoration.
