Ingredients
- 40 g ginger
- 2 onions
- 60 g grated coconut
- 2 tbsp peanut oil
- pinch of salt and pepper
- 800 g cooked shrimp, peeled
- 2 limes
- 1 can pineapple slices
- 10 fresh coriander leaves
Instructions
- In a bowl, mix the finely chopped onions, grated ginger, peanut oil, grated coconut, salt, and pepper.
- Add the freshly squeezed lime juice and finely chopped coriander.
- Pour the mixture over the shrimp and add the pineapple pieces.
- For extra flavor, refrigerate for several hours to marinate.
- When ready to serve, add some fresh coriander leaves for decoration.
