Quick and Easy Tomato Soup


For finishing:

– Fresh cream for those who like it
– Chervil
– Chives
– 800g canned tomatoes
– 1 onion
– 1 tablespoon of olive oil or butter
– Thyme
– Pepper
– Salt
– 1 garlic clove


Step 1

Melt the onions and garlic in oil or butter.

Step 2

Add the large can of whole peeled or cubed tomatoes. Add the same amount of water as the can.

Step 3

Add 1 cubed potato or 2 tablespoons of mashed potato flakes, a small sprig of thyme, a quarter of a bay leaf, salt and pepper, and simmer for 25 minutes. Blend very finely.

Step 4

Serve hot with a tablespoon of fresh cream on the plate, or very cold in the summertime with finely chopped chives or chervil.
