Quick Tabouleh: Easy-to-make salad with fresh parsley, mint & juicy tomatoes. A healthy and refreshing dish for any occasion!

Ingredients

5 medium tomatoes
4 tbsp frozen chopped parsley
1 tsp salt
1 pinch of pepper
1 cucumber
1 peeled white onion
6 sprigs of mint
200 ml lemon juice
400 g medium semolina

Preparation

Step 1

Wash, remove the stem from the tomatoes and cut them into 4 pieces. Blend them in a food processor. Arrange them in a salad bowl.

Step 2

Peel the cucumber, cut it into large cubes and blend it in the food processor. Arrange them with the tomatoes.

Step 3

Peel the white onion, cut it into 4 pieces and place it in the food processor, add the mint leaves and lemon juice. Blend and pour the mixture with the tomatoes and cucumber.

Step 4

Add the parsley, salt, pepper and semolina. Stir well, place a lid on top and let it rest for 35 minutes in the fridge to allow the semolina to swell.

Step 5

Serve very fresh.
