Ingredients
- 6 tbsp fine salt
- 1 small glass of vinegar
- 1 tsp of sugar
- olive oil

- 1 tbsp mayonnaise
Preparation
- Clean the cabbage, remove the first dry leaves, and cut into thin strips.
- Put them in a large bowl, sprinkle with salt, and pour in the vinegar.
- Knead everything by hand for a few minutes to mix and soften the cabbage strips. Keep it waiting for 40 minutes, renewing the kneading 2 or 3 times.
- Rinse several times with plenty of water, possibly soak for a few minutes to remove the salt.
- Squeeze the lemons. Add grated or finely crushed garlic cloves, sugar, mayonnaise, and olive oil to the juice. Lightly salt and generously pepper.
