Red cabbage slaw

Ingredients

  • 6 tbsp fine salt
  • 1 small glass of vinegar
  • 1 tsp of sugar
  • olive oil
  • pepper
  • salt
  • 1 medium red cabbage
  • 1 lemon
  • 4 garlic cloves
  • 1 tbsp mayonnaise

Preparation

  1. Clean the cabbage, remove the first dry leaves, and cut into thin strips.
  2. Put them in a large bowl, sprinkle with salt, and pour in the vinegar.
  3. Knead everything by hand for a few minutes to mix and soften the cabbage strips. Keep it waiting for 40 minutes, renewing the kneading 2 or 3 times.
  4. Rinse several times with plenty of water, possibly soak for a few minutes to remove the salt.
  5. Squeeze the lemons. Add grated or finely crushed garlic cloves, sugar, mayonnaise, and olive oil to the juice. Lightly salt and generously pepper.
  6. Pour the sauce over the well-drained cabbage.
