Ingredients
1 lemon, juiced
1 tbsp golden caster sugar
Small handful of mint, leaves picked
100ml white rum
100ml limoncello
Ice
300ml soda water
Method
STEP 1
Place the lemon juice, golden caster sugar, and half of the mint leaves into a cocktail shaker. Use a cocktail muddler or the end of a rolling pin to try and dissolve the sugar.
STEP 2
Add the white rum and limoncello to the shaker along with a handful of ice. Cover the shaker and shake until the outside feels cold.
STEP 3
Fill two tall glasses with ice, then strain the cocktail into the glasses and top with soda water. To serve, garnish the glasses with the leftover mint leaves.
