Noodles are one of the main foods in Eastern cuisine: also known as vermicelli or spaghetti, they can be made from soy, rice, or many other types of ingredients. The Chinese recipe for rice noodles with meat and vegetables is typical of many regions, in each of which it is prepared with different times, methods, and ingredients. Rice noodles with meat and vegetables


– Rice noodles 200g
– Pork loin 100g
– Zucchini 100g
– Carrots 100g
– Onions 60g
– 2 eggs
– 6 tbsp sunflower seed oil
– 2 tbsp rice wine
– Soy sauce (optional) to taste
– Fine sea salt to taste
– White pepper to taste

1. First, soak the rice noodles in plenty of warm water for about 30 minutes. Meanwhile, prepare the rest of the ingredients: cut the zucchini into thin strips and do the same with the carrots and onions.
2. Cut the pork loin into thin strips too.
3. Heat 5 tbsp of sunflower seed oil in a wok over high heat, then add the onions.
4. Add the pork loin and brown for 30 seconds. Move the meat and onions to one side and pour in the beaten eggs. Continue to stir for 30 seconds, stir-frying everything.
5. Add the carrots and zucchini and cook for a minute and a half.
6. Drain the rice noodles and transfer them to the wok.
7. Season with salt, white pepper, and rice wine. If desired, you can also add soy sauce at this point.
8. Continue stir-frying everything for about 5 minutes until the noodles are soft and no longer pale.
9. Finally, add a tablespoon of sunflower seed oil with the heat off to make them shiny and glossy.
10. Serve immediately.
