Ingredients
25 cl water
60 g butter
pepper
salt
120 g flour
3 tablespoons mustard
1 onion
choux pastry
4 eggs
1 andouillette sausage (300 g)
Preparation
Step 1
For the filling, sauté the sliced onion in a little olive oil.
Step 2
Add the chopped andouillette sausage, then the mustard.
Step 3
Cook everything well. Set aside.
Step 4
For the choux pastry, bring the water to a simmer in a saucepan.
Step 5
Add salt and pepper, then the flour all at once.
Step 6
Remove from heat and mix until a dough is formed.
Step 7
Add the eggs one at a time, mixing well.
Step 8
Add the filling to the dough and mix well.
Step 9
Scoop small spoonfuls onto a baking sheet using two tablespoons.
Step 10
Bake at 180°C, thermostat 6, for 25 to 30 min.
