Ingredients
For the dressing:
- Pepper
- Salt
- 1/2 tsp nutmeg
- 1 tsp Dijon mustard
- 3 tsp dry white wine
- 1/2 tsp coriander powder
- 2 tbsp olive oil
For the salad:
- 4 lettuce leaves (batavia, lettuce or iceberg)
- 300g potatoes
- 1 shallot
- 2 sweet and sour gherkins
- 6 pitted black olives
- 100g natural smoked soft herring
- 1 fried shallot or onion
- 1 tbsp liquid fresh cream
Preparation
Step 1
Wash the salad and cut it into medium-sized pieces.
Step 2
Cook the potatoes (with the skin on) for 20 minutes in boiling water, let them cool, peel them, and cut them into 3-4mm thick slices.
Step 3
Peel and thinly slice the shallot, and also the gherkins. Cut each olive into 2 or 3 pieces, the herring vertically, into 1cm wide strips.
Step 4
Thoroughly mix all the dressing ingredients.
Step 5
In a salad bowl, layer the salad, shallot, potatoes, herring, and gherkins in order, then pour the dressing over everything and chill for 20-30 minutes.
Step 6
Remove the salad from the fridge 10 minutes before serving, garnish with the olives and fried onions. Mix at the table to maintain the crunch of the fried onions, and enjoy!
