Ingredients
2 tablespoons of vegetable oil
6 potatoes, peeled and cubed
2 pounds of smoked sausage, sliced
1 onion, sliced
2 green bell peppers, chopped
Directions
1. Heat the vegetable oil in a large skillet over medium heat.
2. Add the cubed potatoes to the skillet, cover and simmer while turning occasionally for about 10 minutes or until the potatoes are tender and slightly browned.
3. Stir in the sliced smoked sausage, sliced onions, and chopped green bell peppers.
4. Cover the skillet and cook for about 5 more minutes or until the onions and peppers are cooked to your desired tenderness.
