Tomato and Goat Cheese Tart

150g flour
75g butter
1/2 cup water
3 tomatoes
olive oil
1 fresh goat cheese
fresh basil

Step 1
Prepare the pie crust by mixing the flour and salt with the butter cut into small pieces.

Step 2
Quickly crumble to obtain a coarse sand, add water little by little.

Step 3
Be sure to work the dough as little as possible.

Step 4
Let it rest for 15 minutes. In the meantime, wash and slice the tomatoes, chop the basil and cut the cheese into small pieces.

Roll out the dough in a pre-buttered (or lined with parchment paper) mold.

Brush the bottom with mustard (more or less to taste, but it loses its spiciness when cooked).

Arrange the tomato slices to cover the dough,

Then the pieces of cheese.

Sprinkle with basil,

Drizzle with olive oil.

Bake at 180°C (thermostat 6) for 25 to 30 minutes.
