Tomato Savory French Toast” – 26 characters

Ingredients

For the garnish:

  • 2 ripe round tomatoes
  • 2 tablespoons of olive oil
  • 2 tablespoons of water
  • Pepper
  • Salt
  • A few drops of tabasco
  • 1 shallot (or a small onion)
  • 2 tablespoons of tomato coulis
  • 50g of feta cheese

For the French toast:

  • Pepper
  • Salt
  • Spices
  • Butter for cooking
  • 1/2 a slightly stale baguette
  • 1 egg
  • 30cl of milk
  • Mexican spice mix

Preparation

Step 1:

  • Peel the tomatoes, remove the seeds and cut them into cubes.

Step 2:

  • Slice the shallot.

Step 3:

  • Heat the olive oil in a saucepan. Sweat the shallot in it, then add the tomatoes, water and tomato coulis. Season with salt, pepper and tabasco.

Step 4:

  • Simmer while stirring until you obtain a puree.

Step 5:

  • Add the crumbled feta cheese and stir until melted.

Step 6:

  • For the French toast, whisk the egg with the milk and the spices in a shallow dish.

Step 7:

  • Cut the half-baguette in half along its length. Dip the pieces in the egg/milk mixture.

Step 8:

  • In a hot frying pan, put a little butter, then cook the French toast until golden brown.

Step 9:

  • To serve, spread the tomato garnish on top of the French toast.

Step 10:

  • You can serve it with a salad and grilled or uncooked ham.
